NewCM is a contextual menu plugin that makes it easy to make new documents in a specific location. After configuring it by putting commonly used file types in a "NewCM Items" folder, you can control-click in a Finder folder window and select one of those types from a submenu. NewCM then creates the file and opens it.

There is also a "NewCM Applications" folder, which you can use to specify alternate applications for opening the new files. You can even use this feature to run scripts!
